Charles Adams @bigangrylaw - Brian Rusk, the Chief of Police for Hitchcock ISD PD took his own life in his home hours after escorting his school district’s Girl’s Basketball team home from the state tournament hours after winning the Texas State Championship for their division. The girls insisted on him being in their championship photo. He was known for his community involvement and his dedication to putting student safety over rule enforcement which is a tremendous departure from the prevailing norms of school district policing in Texas. Heartbreaking for his family, community, department and Hitchcock’s students. We never know what people are going through. We should all be a bit nicer.

Chef Andrew Gruel @ChefGruel - It they are thicker than an inch, I would salt a day before you cook (salt as if you were sprinkling a light snow fall) then rub with a touch of fat and slow cook in a 250f oven until the temp hits 110f. Remove and blast in a pan or on the grill to finish; pull around 125. As it’s resting, rub with some whole butter and season with freshly cracked pepper. If you want to get extra fancy, pour the juices that run off during the rest stage into a  pan and mount w more butter as a glaze. No piece of flavor left behind.

Chef Andrew Gruel @ChefGruel - I’ve been doing a Mediterranean style ground beef and tomato braise with green olives. Sauté onions, then add ground beef, brown and finish at the end with chopped garlic, then add crushed tomato, chopped green olives, some capers, a touch of anchovy or Worcestershire, tons of fresh herbs. Simmer until ragu-like then finish with a ton of fresh Parmesan and a dash of balsamic vinegar. Serve w toasted sourdough.
