Also pro-tip: if you get sardines in oil (as you should), you can drain the oil into a bowl. Add a teensy bit of mustard, and then some vinegar or lemon juice and stir. PRESTO you've made what amounts to fish-flavored mayonnaise to put on your sardine sandwich. 
Pro-tip Two: sardines are NOT a good substitute for anchovies. However, you can use them in the same recipes as canned tuna successfully.
