I was in a large college auditorium with other men. We were waiting for our professor to give an address. We all knew what it would be about. He would tell us that we were on the verge of a terrible global event that had the potential to wipe out much of the world's population. At the last minute, he decided not to give the address, and he could not be found. So, I stepped up to the podium and addressed the room. I gave my own rendition of the address I imagined he would have given. I told the men we were at the precipice. We all knew it. The day had come that would test our character. We needed to be fearless and confront the present danger with boldness.

Preethi Kasireddy @iam_preethi - Part of it is (I think) because Americans expect food to last in the fridge for weeks. In Europe, people shop for groceries almost daily. Fridges are smaller. Storage is limited. You buy what you need for the next day or two. In America, we do a massive weekly haul and expect everything to still be good 10 days later. That expectation changes how food is made. Bread that lasts weeks on a shelf requires preservatives. Dairy that won’t spoil for a month requires stabilizers. Produce that needs to look perfect after a cross country truck ride requires waxes and coatings. European bread gets moldy in a few days That’s what bread is supposed to do. The entire food system in America is built around bulk buying, long storage, and convenience.
