In addition to those protections, they must clear federal aviation vetting, which can take months (sometimes longer) before a replacement can even step foot behind the line. The result is a system where termination is technically possible but practically rare. Chronic rudeness, slowness, poor hygiene, sloppiness, and general incompetence are often not treated as grounds for termination unless they’re exhaustively documented and escalated through a lengthy disciplinary process. Over time, that standard becomes normalized behavior.
You’d be shocked at what goes on in some of those kitchens. And that reality is exactly why so much airport food (even at the “better” concepts) is pre-bagged, reheated, and microwaved. It’s not about quality; it’s about designing food that survives a broken system.
