That’s great when you want fluffy, separate grains, but starch is also flavor and texture insurance. When you cook rice in the sauce (think risotto) , that starch thickens the liquid naturally, helps the sauce cling to the rice, builds richness without cream or extra fat. So if you want creamy risotto-like rice (also great with barley, quinoa, farro, etc) don’t rinse. For regular fluffy steamed rice, rinse.
