You could just buy a sram or shimano groupset here, the mechanical ones are heavily discounted these days too.
For example I bought my Shimano GRX RX820 12s mechanical for 400 euros 2 months ago.
Combine that with a china frame and wheels that that uses the workaround and you can build a very nice bike for very cheap.
